I really love a recipe that can be thrown into the slow cooker and forgotten about all day. I especially love when those recipes fill my house with delicious smells throughout the day. My Chipotle Shredded Beef checks off both of those boxes! It’s incredibly simple, using mostly pantry ingredients, and doesn’t require much effort. It’s a ‘dump and go’ kind of recipe, which is fantastic for busy people who want a delicious home cooked meal, without the effort!
What you need to make Chipotle Shredded Beef
- chuck roast
- fire roasted tomatoes
- kosher salt
- black pepper
- garlic powder
- cumin
- chili powder
- dried oregano
- bay leaves
- chipotles in adobo
How to make Chipotle Shredded Beef
This recipe is incredibly simple to throw together. You simply add all of the ingredients to a slow cooker and cook on high or low for several hours. The result is a house filled with a delicious smell, and a slow cooker filled with the most flavorful shredded beef.
High or Low Cooking
When I have the time, I like to cook this recipe on the low setting. I think the flavors develop better and the result is a deeper flavor. The meat also has a chance to break down much better, the longer it cooks. I tested this recipe on both high and low cooking settings and both are delicious. If you only have 4-6 hours to cook the beef, it will still be incredibly delicious and tender!
Shredding the Meat
Once the time is up and the meat is tender, remove it from the slow cooker and transfer to a large plate. Shred the meat with two forks. If you are having trouble shredding the meat, it mostly likely needs more time to cook. You will know it’s ready when the meat is ‘fall apart’ tender.
After shredding the beef, place it back into the slow cooker and combine it with the juices.
Serve the shredded beef in tacos or burritos, in salads or on tostadas, pretty much anything your heart desires! This recipe is incredibly versatile and can be used for an array of dishes!
Chipotle Shredded Beef

Ingredients
- 3-4 lbs Chuck Roast
- 1 14oz can Fire Roasted Tomatoes
- 1 teaspoon Kosher Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Cumin
- 2 teaspoons Chili Powder
- 1 teaspoon Oregano dried
- 2 Bay Leaves
- 2 Chipotles in Adobo
Instructions
- In the bowl of a slow cooker, add all ingredients and mix well to ensure even distrubtion of seasonings.
- Cover and cook on low for 6-8 hours or high for 4-6 hours.
- Once the beef is finished cooking, remove it from the slow cooker and shred. Add shredded beef back to the slow cooker and toss to coat in the juices.

Super easy and I had all but one ingredient in my pantry- the chipotle in adobe sauce.
I was able to get everything in the pot by 10am, so I did the roast for low at 8 hours.
First off, the house smelled amazing with this cooking in the kitchen & it was so hard not to want to constantly peek in and potentially try it.
I knew this roast was amazing as soon as our family dinner was over.
If all my kids ate without hesitation and bribery, its a freaking hit!
I was hesitant of the chipotle spice (cause out of the 5 of us only 2 eat spicy foods).
But it wasn’t. It was mild and the chipotle/adobe sauce added a delightful smokey flavor to the meat.
We decided on soft tacos for the kids (lettuce and cheese on top) & Tajin tostadas for us (beans, lettuce, tomatoes, cotija cheese & hot sauce).
This will now be in our family meal planning rotation. Bonus to this- left overs! Both my husband and I split a salad and will be adding this meat to top it for our lunches. The little bit that’s left will be fought for now 🙂

This was so yummy! As a mom of young kids, being able to throw some pantry staples into the crockpot, smell the deliciousness all day long, and have an easy, family friendly meal at the end of the day is priceless. My son is a little sensitive to spice, so as a precaution, I only put 1 pepper + some of the sauce from the chipotle in adobo. We ate the meat in burritos and everyone wanted seconds! This will definitely be in our regular rotation.
