- 7 oz Goat Cheese slightly softened
- ¾ cup Green Olives Castelvetrano are my favorite for this dish, roughly chopped
- 1 small Garlic Clove minched or grated
- ¼ cup Fresh Parsley loosley packed & chopped
- ½ Lemon zested
- 2 tablespoons Lemon Juice
- 3 tablespoons Olive Oil
- Kosher Salt
- Black Pepper
- Crackers for serving
In a medium sized ramekin or small bowl, spread the softened goat cheese into an even layer.
Next, prepare the Gremolata. In a medium bowl: combine olives, garlic, parsley, lemon zest, lemon juice & olive oil. Season with salt & pepper.
To serve, spoon the Gremolata over the goat cheese & enjoy!
