Salsa Verde Pork – A Slow Cooker Meal

Juicy chunks of pork slowly cooking in a flavorful salsa verde, on a bed of diced onion, diced poblano peppers and garlic. All seasoned with a zesty blend of cumin, oregano, and garlic powder. Serve over rice and garnish with cilantro, lime juice, fresh radishes and sour cream for a warm bowl of delicious stew.

The slow cooker is one of my favorite methods for cooking pork because it gently cooks it, resulting in juicy, tender pork that is cooked to perfection. This recipe is no exception to that. The pork cooks slowly in a salsa verde with a few aromatics and seasonings thrown in. This recipe is so simple to throw together mid-week and leaves your house smelling amazing. Serve the pork over rice, with tortillas or chips for a satisfying, rib sticking meal your whole family will love!

What You Need To Make Salsa Verde Pork

  • Boneless Pork Loin
  • Yellow Onion
  • Poblano Peppers
  • Garlic
  • Kosher Salt
  • Black Pepper
  • Garlic Powder
  • Cumin
  • Dried Oregano
  • Salsa Verde (my favorite is Frontera)
  • Cilantro
  • Limes
  • Rice
  • Radishes
  • Sour Cream

How to Make Slow Cooker Salsa Verde Pork

The beauty of this recipe is how easily it comes together. Once you chop the meat and vegetables, everything gets dumped into the slow cooker, and hangs out for a few hours until it’s juicy and tender.

  1. Begin by making the spice mix. In a small bowl, combine salt, pepper, garlic powder, cumin and oregano. Stir to combine and set aside while you prepare the slow cooker.
  2. Next, add the onions, peppers, and garlic to the bowl of your slow cooker and sprinkle on half of the seasoning mixture. Stir to coat all of the vegetables in seasoning then add the cubed pork. Sprinkle on the remaining seasoning mixture and stir to combine everything. Make sure the seasoning is evenly distributed.
  3. Pour the salsa verde over the pork and vegetables and gently stir before popping on the lid and cooking on low for 8 hours, or high for 4 hours. You want the pork to be tender, but not completely falling apart.
  4. Once the pork is finished cooking, remove the lid and add in the chopped cilantro and lime juice to the slow cooker. Stir to combine, then serve over rice and garnish with more cilantro, sliced radishes, and sour cream.

Questions About Salsa Verde Pork

If my family doesn’t like pork, can this be made with chicken?

This can absolutely be made with chicken! Replace the pork loin with whole chicken breasts, or chicken thighs. Once the chicken is cooked, shred it and proceed with the recipe as noted.

Ingredients

  • 3 lbs Boneless Pork Loin cut into 1 ½" pieces

  • 1 16oz jar Salsa Verde or Green Chili Salsa
  • ⅓ cup chopped Cilantro plus more for serving
  • 1 Lime juiced, plus more for serving
  • Rice for serving
  • 6 Radishes thinly sliced
  • Sour Cream for serving

Instructions

  • In a small bowl, combine salt, pepper, garlic powder, cumin and oregano. Stir to combine and set aside.
  • Add onions, peppers, and garlic to the bowl of your slow cooker and sprinkle on half of the seasoning mixture. Stir to coat in seasoning then add the cubed pork. Sprinkle on the remaining seasoning mixture and stir to combine everything.
  • Pour the salsa over the pork and vegetables and gently stir before adding the lid and cooking on low for 8 hours, or high for 4 hours.
