12 Recipes to Try in January

January 10, 2022 by Ashley 4 Comments

It can feel overwhelming jumping into a new year with the pressure of dieting, eating ‘healthy’, or changing your diet drastically. We all know those types of changes aren’t sustainable long term, so you’re just setting yourself up for disappointment.

When a New Year begins, I like to focus on recipes that are full of veggies, high in protein, or just lighter overall. It’s normal to crave lighter foods after the holidays and there’s nothing wrong with leaning into those cravings.

Here are 12 recipes to try out this month!

Mexican chopped salad topped with meatballs on white platter with wooden serving spoons
  • Taco Chopped Salad with Chicken Meatballs
roast beef sandwiches, sliced and wrapped in newspaper. Sandwiches are stacked up on a cutting board with leftover ingredients in the background.
  • Roast Beef Sandwiches with Horseradish Sauce
  • Pesto Tortellini Pasta Salad
lemon parmesan asparagus on a pink ceramic plate resting on a wooden cutting board with a fork in the background & a wedge of Parmesan Cheese
  • Parmesan Roasted Asparagus
steak salad dressed on a serving platter with extra ingredients in the background
  • Easy Steak Salad with Roasted Potatoes
creamy balsamic dijon dressing in small glass jar for serving with bowl of salad in the background
  • Creamy Balsamic Dijon Dressing
egg salad sandwich on white bread served on a pink plate
  • Classic Egg Salad
place of roasted Brussels sprouts with pomegranate seeds and balsamic reduction
  • Crispy Brussels Sprouts with Pomegranate and Balsamic
  • Harvest Chopped Salad with Shallot Vinaigrette
  • Butternut Squash Soup with Linguica and Thyme
  • Roasted Tomato Basil Soup
  • Simple Shrimp Ceviche

I hope you love these recipes as much as I do! If you make any, don’t forget to tag me on instagram & leave a review on the blog!
